It is not so much the flavor of the ice cream that you should be thinking about but the flavor that remains in your mouth after the ice cream has gone. That is what is considered the cream chargers aspect of the flavor – it would be called the long-note in wines.

The cream chargers are what is left of the flavor after you have finished eating – the bit that you get to think about and ponder over long after the ice cream has slid down your throat – what you remember when you close your eyes and imagine that hot day when you ate it. The synthetic flavours do not have any of this cream chargers aspect because they are so instant and are almost all water soluble which is what makes them so easy to use from a manufacturers point of view. The fat soluble flavours are the ones that last- think about real chocolate – that is a great example of what we are talking about here.
